Fried Chicken Liver Spicy with Green Chili and Crisp Potato

I ever posted fried liver spicy with beef liver, Today, I share fried chicken liver with pototo crispy and cut julienne. Mixed when ready to be served. So the potato is always crispy.







Ingredients :
  • 300 gr chicken liver, diced.
  • 5 shallots, thinly sliced.
  • 3 cloves garlic, finely chopped.
  • 4 lime leaves.
  • 2 bay leaves.
  • 1 stalk lemongrass, crushed.
  • 4 tbsp tamarind juice.
  • 1 tbsp sugar.
  • A pinch of salt.
  • 1 - 2 green chilies, oblique slices.
  • 2 medium potatoes, julienne.
  • 3 tbsp vegetable oil to sautè.
Instruction :
  1. Heat oil, sautè shallot, garlic, bay leaves, lime leaves and lemongrass until fragrant.
  2. Add salt, tamarind juice, sugar and stir until mix well. Add chicken liver, cook until well done with medium flame and stirring occasionally.
  3. While fry the potatoes until golden brown, set aside.
  4. After the chicken liver is well done, add green chili and mix well. Cook for  minutes. Turn off the heat.
  5. Before served, mix the chicken liver and fried potato.
