Pempek Dos (Fishless)

Pempek is a snack from South Sumatera - Indonesia. To make it, originaly mix with ikan tenggiri (mackerel fish). If we don't have extra ikan tenggiri, so we can make fishless. Yummy too. You can follow my ingredients below.





Ingredients :
  • 250 grs all purpose flour.
  • 250 grs tapioca starch.
  • 400 ml water.
  • 3 cloves garlic, puree.
  • 1 tbsp ground pepper.
  • Salt is required.
Instruction :
  1. Mix flour, salt, garlic, ground pepper, and water into sauce pan. Stir with wood spoon until combine evenly. Simmer on the low flame until thick while stirring constantly. Let it cool.
  2. Boil water in to big pan until boil and add vegetable oil.
  3. Transfer the dough on the big bowl, mix with tapioca starch. Knead until smooth.
  4. Shape the dough is elliptical (lenjer) and some stuffed with egg (kapal selam/sub marine). Boiled until float, it means mature. Drained and let it cool.
  5. Ready to be fried and served with cuko (sour brown sugar sauce).
How to make Cuko (Sour Brown Sugar Sauce) :
Ingredients :
  • 250 grs brown sugar, chopped.
  • 400 ml water.
  • 50 grs tamarind.
  • 2 tsp vinegar.
  • 4 cloves garlic,
  • 5 cayenne peppers (optional).
  • Salt is required.
  • Small dried shrimps, puree (optional). (Can boiled with sauce or sprinkled when ready to eat).
Instruction :
  1. Pulse garlic, cayenne pepper, and salt.
  2. Simmer brown sugar, tamarind and vinegar with the low flame until sugar and tamarind melt, then filtered.
  3. Simmer once again with puree garlic, cayenne pepper and salt until boil. Turn of the flame and transfer to bowl serving.
  4. Ready to be served with pempek.
