Bakakak Chicken

Bakakak Chicken is Sundanese Dish. With habenero chilies is very spicy. But, the chilies make perfect taste. With grilled, the aroma is much more enjoyable. Usually bakakak chicken is halved only from the chest and not dropping out. The grilled or fried. Eat with the rest of spice and liwet rice sauted of dried fish. Yummy.


Ingredients :
  • 1 chicken, halved from chest and not dropping out. But I had a half of chicken only.
  • 4 cloves of garlic, mashed until smooth.
  • 1/2 tsp groung turmeric.
  • 2 tsp salt.
  • 800 ml water.

Ingredients of Ground Spices :
  • 1 large red onion.
  • 6 cloves garlic.
  • 12 habenero. If you don't like so hot, you can reduce the chilies.
  • 4 cm ginger.
  • 1 ground coriander.
  • 8 almond, roasted.
  • 3 tbsp palm sugar.
  • 1 tsp salt.
Instruction :
  1. Mix garlic, turmeric, salt and water. Stir and marinated chicken and let stand for 30 minutes.
  2. Stir fry the spices mix until fragrant, add chicken with marinated water. Stir until combine evenly and cook until chicken is tender and water is dries up.
  3. If chicken is not tender and water dries up, add little water as needed and transfer to heat resistant pot with all of spices.
  4. Grilled in the oven with temperature 200°C for 30 minutes and until has black spot surface of the chicken.
  5. Served the bakakak chicke with the rest of spices and liwet rice saute dried fish.
